41- Underweight- Suffering from IBS and Food Allergies

I need some help from anyone who can do so. I am 41 yrs old, have IBS (and panic attacks that come along with it), and suffer from being allergic to dairy.
I do ok gaining a few pounds (currently at 100lbs) then my IBS kicks into an attack and I loose 5-6 lbs in one or two days while recovering from it. I try to eat extremely healthy, take a vitamin, and increased my fiber - alot. Drink mostly water (tea, etc.) and alot of fruits and veggies, but still can't gain weight. I try to eat as much as I can but can not seem to get past 600 or so calories. I know I should at least get 1200 a day but that just doesn't happen.
HELP!
Anyone got some tricks up there sleeve on how to eat healthy, no dairy at all (whey or dairy bi-products), and get all the calories I need to gain some kind of weight?

Hi-
I have had Crohn's disease for the last 22 years. I have struggled to keep my weight up for most of my disease. I've spent a lifetime it seems dealing with the issues you describe.
A couple of things I've found:
1) Omega 3 fatty acids are essential. WIthout good fat you can't fully utilize the nutrients your body does consume
2) I use protein shakes, Boost/Ensure in between the meals I eat. I eat 6 times a day, smaller mini meals
3) Eliminate sugar. Sugar is an inflammatory agent in the body. Inflammation can't help you. Good fats, blueberries, etc are good anti-inflammatory foods.
4) I believe for myself that it's about creating the right chemical mix; good protein, good fat, good carbs in every meal, keeping my blood sugar stable. I offer some of my ideas on my website: www.foodisfuel4you.com I created it after years of frustration with Doctor's who didn't believe in what was happening or what it meant from a nutritional standpoint - if they didn't learn it in medical school and there is no "scientific evidence" to support the claim, it doesn't exist. In my opinion it's out own ignorace which has lead to the prevelence of heart disease and diabetes in America.
