Bulgur Pilaf with Mushrooms
Ingredients:
1 cup chicken stock
1 cup onion, chopped
2 tsp olive oil
1/4 lb mushrooms, thinly sliced
1/2 bay leaf
1/2 cup pearled barley
1-1/2 tbsp parsley, minced
Cooking Directions:Heat oil in a heavy saucepan over medium heat. Sauté onion, mushrooms and bay leaf 5 minutes, stirring, until onion is softened. Stir in barley, stock and salt and pepper to taste. Bring to a boil. Reduce heat to low, cover pan and simmer 30-35 minutes, or until liquid is absorbed and barley is tender. Discard bay leaf and stir in parsley.
