Chilled Poached Oranges
Ingredients:
1/4 cup orange marmalade
2 tbsp orange zest, cut into thin strips
2 large navel oranges, ends cut off, peeled
1/4 cup water
3 tbsp sugar
Cooking Directions:Squeeze juice from orange ends into a heavy saucepan. Add zest, water, sugar and marmalade. Bring to a slow boil and cook 4 minutes. Reduce heat to low and add oranges to saucepan. Cover and simmer 4-5 minutes, turning oranges occasionally. Transfer oranges to individual serving dishes. Increase heat to medium and simmer until sauce is reduced by half. Pour sauce over oranges. Chill until ready to serve. |
