Garden Wrap
Ingredients:
1 cup zucchini, chopped
1/2 tsp garlic powder
1 cup tomatoes, chopped
4 8 inch flour tortillas, warmed
1/2 tsp lime juice
1 cup yellow squash, chopped
2 tbsp balsamic vinegar
1/8 tsp hot pepper sauce, to taste
1/2 tsp dried oregano
1 cup red bell pepper, chopped
1 cup cooked brown rice
Cooking Directions:Turn on broiler. Spread first 4 ingredients on a cookie sheet and broil 5-10 minutes, until browned. Combine vegetables with remaining ingredients, except tortillas, in a bowl. Spoon 1 cup filling down center of each tortilla. Roll up and serve.Nutritionist Recommended For: |
