Prickly Pear Marmalade

Ingredients:

4 cups water
9 prickly pears, chopped, peeled, and seeded
2 large oranges, chopped and seeded
2 medium lemons, thinly sliced and seeded
5 cups sugar

Cooking Directions:

Combine oranges, lemon, and water in a large saucepot; simmer 5 minutes. Cover and let stand 12-18 hours in a cool place. Cook rapidly until peel is tender. Stir in prickly pears. Add sugar, stirring until dissolved. Bring to a boil over high heat, stirring constantly. Cook rapidly almost to gelling point. As mixture thickens, stir frequently to prevent sticking. Remove from heat. Skim foam if necessary. Ladle hot marmalade into hot jars, leaving .25 in. headspace. Adjust two-piece caps. Process 15 minutes in a boiling-water canner. Yield: About 6 half-pints.
