Sautéed Zucchini

Ingredients:

1 clove garlic, crushed
1/8 tsp salt (optional)
1 tsp unsalted butteror margarine
2 tbsp chicken stock
1-1/4 lb zucchini, cut into .25 in. thick slices

Cooking Directions:

Heat butter and stock in a heavy nonstick skillet over medium-high heat. Season with salt and pepper to taste. Add zucchini and garlic, cover skillet, and sauté 5-7 minutes stirring occasionally until just tender.
