Sauteed Apple Slices with Apricot Sauce

Ingredients:

1 tsp vanilla extract
1/3 cup sugar
1/3 cup water
3 oz dried apricots, about 10 large
3-3/4 cups canned apricots halves, drained
3 Jonathan or Granny Smith large apples, peeled, cored and sliced

Cooking Directions:

Place dried apricots in a bowl and cover with hot water. Soak 10 minutes until soft, then drain. Transfer dried apricots to a processor or blender and purée. Add drained apricots, then enough of the water to make a thick but flowing consistency. Pour into a bowl, cover, and chill. Heat a heavy nonstick skillet over high heat. Sauté apples, sugar, and vanilla 2-3 minutes, stirring occasionally, until apples are just tender. Serve warm apples slices on plates, topped with apricot sauce.
