Sauteed Bean Sprouts

Cooking time: 5 min

Ingredients:

2 tsp olive oil
2 cups bean sprouts, rinsed and drained
1 summer squash, cut in half, seeded and shredded
1 carrot, peeled and shredded
1 scallion, trimmed and cut into thin strips

Cooking Directions:

Heat oil in a wok or heavy nonstick skillet over high heat. Sauté bean sprouts 1 minute. Add remaining ingredients and sauté 3-5 minutes or until carrots are tender. Season with salt and pepper to taste.
