Sicilian Bean Salad

Ingredients:

1/4 cup fresh basil, chopped
1 green bell pepper, seeded and chopped
1/2 cup red onions, diced
1/2 cup black olives, sliced
1/4 cup flat leaf parsley, chopped
1/2 cup bottled balsamic vinaigrette dressing
2 cups organic salad greens mix
1 can (15 oz) white beans
3/4 cup artichoke hearts in water, drained and chopped
1/2 cup oil-packed sun-dried tomatoes, drained and minced
2 hard-cooked eggs, chopped

Cooking Directions:

Combine all ingredients, except dressing and salad greens, in a bowl. Moisten with dressing and chill before serving on salad greens.
