Spinach Salad with Sun Dried Tomatoes
Ingredients:
1-1/2 tsp mustard
1/4 cup croutons
1/4 tsp salt to taste (optional)
2 cups mushrooms, sliced
2-1/2 tbsp olive oil
1-1/2 tbsp red wine vinegar
1/4 cup sun dried tomatoes, drained and chopped
1 lb spinach leaves, washed and torn into pieces, tough stems discarded
1 clove garlic, crushed
Cooking Directions:Combine spinach, mushrooms and tomatoes in a salad bowl. Combine remaining ingredients except croutons in a jar with a tight-fitting lid. Season with pepper to taste and shake vigorously. Pour dressing over spinach and toss. Serve with croutonsNutritionist Recommended For: |
