Spinach and Yogurt

Ingredients:

2 cloves garlic, crushed
1 cup plain low fat yogurt
2 salt and pepper
2-1/4 lb spinach, or 500 g frozen leaf spinach

Cooking Directions:

Rinse fresh spinach thoroughly and cook in a covered pan, without additional water, until tender. If using frozen spinach, cook according to package instructions. Drain and cool. Mix together the yogurt and garlic and stir into the spinach. Add salt and pepper to taste. Transfer to a serving dish.
