Tomato-Herb Topping
Ingredients:
1/4 cup celery, finely chopped
1 tbsp lemon juice
3 plum tomatoes, seeded and diced
1/2 cup onion, minced
1 tsp olive oil
1 pinch pepper, to taste
1 pinch salt, to taste
1 tsp tarragon, crumbled, or 1-1/2 tsp fresh, minced
Cooking Directions:Heat oil in a heavy nonstick skillet over high heat. Sauté onion and celery 1 minute. Stir in tomato and cook another 2 minutes, or until hot. Remove from heat, stir in remaining ingredients. Serve with fish. |
