Turkey Potato Salad
Ingredients:
2 tsp dill weed
2 medium red potatoes, scrubbed and cubed
1/8 tsp black pepper
3 green onions, chopped
2 tbsp dried parsley
1/2 lb cooked turkey breast, diced
1 cup plain lowfat yogurt
2/3 cup jicama or water chestnuts, diced
2 celery stalks, chopped
Cooking Directions:Place potatoes in a steamer basket over boiling water. Cover pan and steam 12-15 minutes or until tender. Rinse under cold running water and drain thoroughly. Combine with next 4 ingredients in a bowl. Combine remaining ingredients in a bowl and mix thoroughly. Stir into potato mixture. Season with salt and pepper to taste and mix thoroughly. Serve warm or chilled. |
