Warm Zucchini Dijon Salad

Ingredients:

1 tbsp lemon juice
2 oz sun-dried tomatoes
1-1/4 lb zucchini, cut into .25 in. slices
1 clove garlic, mashed
1-1/2 tbsp heavy cream
1/4 tsp Dijon mustard
1-1/2 tsp olive oil

Cooking Directions:

If using tomatoes packed in oil, chop and set aside. If using dried tomatoes, place in a bowl and cover with boiling water. Soak 10 minutes. Drain thoroughly and chop. Transfer to a serving bowl. Place zucchini in a steamer basket over boiling water. Cover saucepan and steam 3 minutes. Drain zucchini and transfer to bowl with tomatoes. Combine remaining ingredients and pepper to taste in a serving bowl. Gradually whisk in oil until emulsified. Add zucchini and tomatoes and toss.
