Wild Rice Salad with Oranges
Ingredients:
2 cups cooked wild rice
1/4 tsp black pepper
2 medium oranges, peeled and cut into chunks
2 green onions, chopped
2 purple onions, chopped
1/4 cup orange juice
1/4 cup fresh mint, or basil
1/4 cup dried cranberries
1/4 cup raisins
1 tbsp olive oil
1/4 tsp salt
Cooking Directions:Combine first 7 ingredients in a large bowl. Combine remaining ingredients in a second bowl, then pour into the first bowl. Toss and let sit for 30 minutes before serving.Nutritionist Recommended For: |
