Apricot Apple Bars
Ingredients:
1/4 cup honey
1/4 lb unsalted butter
1-1/3 tbsp lemon juice
1/2 cup slivered almonds
1-1/3 tbsp brown sugar
1-1/4 cups old fashioned oats
1/4 cup sesame seeds
1 tsp lemon rind, grated
1 apple, peeled, grated
1-1/2 cups almond meal
3/4 cup dried apricots, chopped
Cooking Directions:Preheat oven to 350°F. Grease and line the base of a jelly roll pan with paper. Grease paper. Place grated apple in a towel and squeeze out excess moisture. Combine flour with next 4 ingredients in a bowl. Stir in apple. Make a well in the center. Combine remaining ingredients in a saucepan. Stir over medium high heat until sugar is dissolved. Do not boil. Stir into flour mixture until well combined. Press mixture evenly into pan and bake 35 minutes or until golden. Cool in pan.Nutritionist Recommended For: |
