Artichoke Garbanzo Pasta Salad
Ingredients:
1/4 tsp black pepper
1 red bell pepper, chopped
2 cups fresh spinach leaves, chopped
3 cups cooked pasta spirals, or shells
3/4 tsp dried basil or oregano
1 tbsp water
1 tsp minced garlic
1/8 tsp salt (optional)
1/4 cup feta cheese, crumbled
1 tbsp olive oil or vegetable oil
3/4 lb canned artichoke hearts, chopped
1 can (15 oz) garbanzo beans, drained
1 large tomato, chopped
1 tbsp lemon juice
Cooking Directions:Mix first 6 ingredients in a large bowl. Blend next 7 ingredients in blender or food processor until smooth. Pour over salad and toss. Cover and chill for at least 2 hours. Top with feta cheese before serving.Nutritionist Recommended For: |
