Asparagus with Potatoes and Wild Rice
Ingredients:
1 clove garlic, crushed
1-1/3 tbsp olive oil
1-1/3 tbsp fresh thyme, chopped
2 bacon slices, chopped
3/4 oz butter
3/4 cup cream
2 medium old potatoes, peeled and cut into 1/2 in. cubes
1-1/4 oz sun-dried tomatoes, drained, chopped
1-1/2 oz cooked wild rice, cooked to equal 1/2 cup
1 lb fresh asparagus
Cooking Directions:Heat oil and butter in a heavy nonstick pan over medium high heat. Add potatoes, bacon, and garlic. Cook, stirring, until potatoes are tender. Drain on paper towel. Return potato mixture to pan. Stir in next 3 ingredients and rice. Lower heat and simmer, uncovered, about 3 minutes or until cream thickens slightly. Place asparagus in a steamer basket over boiling water. Cover pan and steam 10 minutes, or until tender. Serve with potato mixture. |
