Beef Curry with Yogurt and Coconut Cream
Ingredients:
1 tsp ground cinnamon
1 cup water
2 onions, sliced
1-1/3 tbsp sugar
1/4 cup olive oil
2 cloves garlic, chopped
1/2 tsp cardamom, ground
2-2/3 tbsp lemon juice
1-1/4 cups plain low fat yogurt
2-1/4 lb chuck steak, chopped
1 tsp garam masala
1-1/3 tbsp hot chili sauce
1-1/4 cups canned coconut cream
2 small cucumbers, sliced
Cooking Directions:Heat oil in a heavy nonstick pan over medium high heat. Add onions and cook, stirring, until soft . Add steak and cook, stirring, until well browned. Stir in next 9 ingredients and bring to a boil. Cover pan and simmer about 1 hour or until steak is tender, stirring occasionally. Remove cover and simmer, further 15 minutes or until slightly thickened. Stir in juice and cucumbers, remove from heat. Cover pan and stand 5 minutes.
