Chateau Briand
Ingredients:
1 clove garlic, crushed
2 tbsp lemon juice
1/2 cup dry red wine
1/2 cup beef stock
1 tsp seasoning salt
2 tbsp oil
2 lb beef tenderloin fillet, center portion
Cooking Directions:Combine first 3 ingredients in a bowl. Place tenderloin in a bowl and cover with marinade. Marinate 1 hour. Remove from marinade. Discard marinade. Preheat oven to 450°F. Sprinkle steak with Beau Monde seasoning and add pepper to taste. Place tenderloin on a rack in a shallow roasting pan. Discard marinade. Sprinkle with Beau Monde seasoning and pepper to taste. Roast uncovered 45 minutes without basting. Transfer roast to a platter, tent with foil and keep warm. Add remaining ingredients to pan and bring to a boil over medium high heat.
