Cheesy Zucchini Macaroni
Ingredients:
3 cups spaghetti sauce
1 cup mozzarella cheese, shredded
3/4 lb rotini pasta, or other spiral pasta
2 medium zucchini, sliced
1 tbsp olive oil
Cooking Directions:Cook pasta in a large pan of boiling water 10 minutes, or until al dente. Drain. Meanwhile, heat oil in a heavy nonstick skillet over medium high heat. Sauté zucchini 4-5 minutes, stirring often, or until tender-crisp. Stir in spaghetti sauce and drained macaroni. Add cheese and stir to combine. |
