Cider Vinegar Potato Salad
Ingredients:
1 apple, chopped
1-1/3 tbsp lemon juice
3 celery stalks, chopped
5 medium potatoes
4 green shallots, chopped
2 tsp brown sugar
2-2/3 tbsp cider vinegar
2 tsp lemon juice
1/3 cup olive oil
1 clove garlic, crushed
1/4 tsp dry mustard
Cooking Directions:Place potatoes in a steamer basket over boiling water. Cover pan and steam 20-25 minutes, or until just tender. Rinse under cold running water to cool, then peel. Cut potatoes into cubes and combine with next 4 ingredients in a large bowl. Combine remaining ingredients in a jar with a tight-fitting lid.
