Fillet of Beef with Brandy Cream Sauce

Ingredients:

2 tbsp Dijon mustard
2 tbsp unsalted butter
1 tsp Worcestershire sauce
1/2 cup whipping cream
2 beef tenderloin fillets, about 6 oz each
1/4 cup brandy

Cooking Directions:

Melt butter in a heavy nonstick skillet over medium high heat. Cook steaks about 4 minutes per side for medium rare, or to desired degree of doneness. Stir mustard and Worcestershire sauce into skillet. Season with pepper to taste. Remove pan from heat. Add brandy and, keeping hands and face away from skillet, carefully ignite. When flames subside, return skillet to heat. Transfer steaks to plates and keep warm. Stir in cream and boil 2-3 minutes or until mixture thickens slightly. Serve sauce with steaks.
