Grilled Chicken Kabobs
Ingredients:
1/4 tsp ground ginger
1/4 cup water
1/4 tsp garlic powder
2 tbsp lemon juice
2 tbsp soy sauce
1 tbsp honey
4 skewers
1 onion, quartered
4 boneless, skinless chicken breast halves, cut into 1.5 in. pieces
1 green bell pepper, seeded and cut into 1.5 in. pieces
8 large cherry tomatoes
Cooking Directions:Combine first 6 ingredients in a glass baking dish. Add chicken and turn to coat. Cover and marinate at least 2 hours in refrigerator. Prepare grill. Remove chicken from marinade and boil marinade 10 minutes in a saucepan. Alternate chicken and vegetables on skewers. Grill 6 in. from medium-hot coals 15-20 minutes, or until done, turning and basting often with marinade. |
