Grilled Salmon Cutlets with Lime Butter

1/4 tsp chili pepper flakes
1-1/3 tbsp oil
1 tsp lime zest
1-1/3 tbsp lime juice
1/2 tsp dried dill
4 salmon cutlets
3-1/4 oz unsalted butter, softened
1 tsp lime zest, extra
1/2 tsp dried dill, extra
1/2 tsp foil

Cooking Directions:

Combine first 5 ingredients in a large bowl and mix well. Add salmon to marinade and turn to cover fish on both sides. Cover and refrigerate 3 hours or overnight. Meanwhile, place butter in a small bowl and beat with an electric mixer until creamy. Beat in rind and dill. Shape butter into a log and wrap in foil. Freeze until firm. Prepare griller. Grill or barbecue salmon 6-8 minutes per side, or until tender. Serve with lime butter.
