Grilled Salmon with Lime Cream Sauce
Ingredients:
1 tbsp unsalted butter, melted
3 cups whipping cream
6 watercress sprigs, optional
1 tbsp lime peel, julienned
6 salmon fillets, 1 in. thick, about 6 oz each
1 tbsp fresh lime juice
Cooking Directions:Place cream and 1-1/2 tsp lime peel in a heavy non-aluminum saucepan. Boil until reduced to 1-1/2 cup. Prepare grill (medium high heat). Brush salmon fillets with butter. Arrange on grill, skin side down. Cook about 4-5 minutes per side, until opaque, basting with butter. Transfer salmon to plates. Whisk remaining lime peel and lime juice into cream sauce. Spoon sauce over salmon fillets. Garnish with watercress sprigs if desired. |
