Grouper with Mushrooms
Ingredients:
1 tbsp olive oil
1/4 cup parsley, chopped
1 tbsp unsalted butter
1/4 tsp salt to taste (optional)
2 shallots, chopped
1/2 lb mushrooms, trimmed and quartered
1-1/2 lb grouper, or red snapper fillets
1 cup dry red wineor chicken stock
Cooking Directions:Melt butter in a heavy nonstick skillet over medium high heat. Sauté mushrooms 4-5 minutes, stirring frequently. Transfer mushrooms to a bowl and set aside. Heat oil in same skillet over medium high heat. Season grouper fillets with salt and pepper to taste. Sauté grouper 3-4 minutes per side or until fish flakes easily. Carefully transfer grouper to a platter and keep warm. Discard all but 1 Tbsp drippings from skillet. Sauté shallots in same skillet 2 minutes or until softened. Add wine to skillet, stirring with a wooden spoon to deglaze. Boil 3 minutes or until liquid is thick and syrupy. Stir in parsley and mushrooms. Cook until heated throughout. Season with salt and pepper to taste. Serve sauce over grouper. |
