Indonesian-Style Salmon Grill

Ingredients:

3 scallions, sliced
1/2 cup orange marmalade
2 tbsp vegetable oil
1 tsp ground ginger
3 tbsp sugar
1/2 cup soy sauce
2 tsp garlic, crushed
2 lb salmon fillets, or steaks
3/4 cup beer

Cooking Directions:

Combine all ingredients, except salmon and scallions, in a bowl. Place salmon in shallow baking dish and pour marinade over. Cover and marinate at least 1 hour in refrigerator. Prepare grill. Remove salmon from marinade, discarding marinade. Place salmon on a sheet of heavy-duty foil cut about 2 in. larger than fish all around. Bend edges up to make a lip around fish. Sprinkle scallions over salmon. Place on hot grill, but not directly over heat source, with grill covered and vents open. Cook 20-30 minutes, until fish is opaque and flakes easily.
