Kemnitz Swedish Brown Beans with Apple
Ingredients:
1/3 cup cider vinegar
4 cups water
1/4 cup unsalted butter
1 cup onion, minced
1/4 cup dark brown sugar
2 cloves garlic, finely minced
1 cup celery, finely minced
1 lb dried white beans, soaked overnight in water to cover
4 beef stock cubes
1/3 cup dark molasses
1-1/2 lb canned apple pie filling
Cooking Directions:Melt butter in a large heavy pot over medium heat. Sauté onion, celery and garlic 7-8 minutes until onions are golden. Add beans together with their water. Add water, bouillon and salt to taste. Increase heat to medium high and bring to a boil. Reduce heat to low and gently simmer 1 hour, stirring occasionally. Stir in remaining ingredients, except apple filling. Simmer uncovered, over low heat about 1 1/2 hours, stirring occasionally until liquid has thickened. Chop apple filling until pieces are about the size of beans. Stir into pot and heat 10 minutes until hot. Season with salt and pepper to taste. |
