Lower Fat Artichoke Stew
Ingredients:
2 tbsp parsley, chopped
4 cups vegetable broth
1 tsp unsalted butter
1 tsp Italian seasoning
1/3 cup all purpose flour
1/4 tsp cayenne, to taste
1 cup scallions, trimmed and chopped
4 cups 2\% milk
2 lb frozen artichoke hearts, thawed
Cooking Directions:Combine first 5 ingredients and salt to taste in a heavy saucepan. Bring to a boil. Reduce heat to medium low and simmer 12 minutes, stirring occasionally. Place flour in a bowl. Gradually stir in milk using a wire whisk or hand blender. Whisk until smooth. Stir flour mixture into stock. Stir in artichokes and simmer 10-15 minutes, or until artichokes are tender.
