Lower-Fat Blackberry Cobbler
Ingredients:
1/2 tsp baking soda
1 tbsp lemon juice
1 tsp vanilla extract
2 tbsp all purpose flour
2 tbsp unsalted butter, melted
2 tbsp lemon juice
1 cup all purpose flour
2 egg whites
3/4 cup sugar
1 tsp lemon zest
1/2 tsp baking powder
1/2 cup plain low fat yogurt
1-3/4 lb blackberries
Cooking Directions:Preheat oven to 400°F. Combine blackberries with next 5 ingredients in a lightly buttered 7x11 in. baking dish. Toss to combine. Set aside. Sift together remaining flour, baking powder and baking soda in a mixing bowl. Set aside. Combine remaining ingredients in a mixing bowl. Mix thoroughly. Stir into flour mixture until mixture is just moistened. Drop by spoonfuls on top of blackberry mixture. Bake 30 minutes, or until crust is golden and mixture is bubbling. |
