Mary's Almond Finger Cookies

Ingredients:

1/2 cup unsalted butter, softened
1 tsp vanilla extract
1/8 tsp salt (optional)
1 cup all purpose flour
2 tbsp sugar
2 oz blanched almonds, finely chopped
3/4 cup confectioner's sugar

Cooking Directions:

Combine first 5 ingredients in a mixing bowl. Beat with an electric mixer until well blended. Stir in almonds. Freeze dough 15 minutes. Preheat oven to 375°F. Divide dough into 5 pieces per serving. Roll into 2 in. long cylinders. Place finger cookies 1 in. apart on a cookie sheet. Bake 17 minutes or until golden. Remove from oven. Set aside 2 minutes. Roll cookies in confectioner's sugar and cool completely.
