Mexican Turkey Frittata

Ingredients:

1/2 cup sour cream
1 cup salsa
8 eggs
1 cup lowfat cottage cheese
1/2 tsp baking powder
1/4 cup all purpose flour
1/2 lb Monterey Jack cheese, shredded
1/4 lb canned green chilies, diced (wear rubber gloves)
1-1/2 lb cooked turkey, cut into .75 in. slices

Cooking Directions:

Preheat oven to 375°F. Whisk eggs in a mixing bowl until thoroughly blended. Add flour, baking powder and salt to taste and mix thoroughly. Stir in next 4 ingredients, mixing thoroughly. Transfer to a buttered 9 in. baking dish. Bake 30-35 minutes or until center is just set. Let stand 5 minutes before cutting into squares. Serve frittata with salsa and a dollop of sour cream.
