Moroccan Couscous with Chickpeas
Ingredients:
2 cloves garlic, crushed
1/2 tsp cayenne
1/4 cup fresh lemon juice
2 tbsp olive oil
1 tsp paprika
2 tbsp scallions, minced
1/4 cup parsley, minced
1 tbsp cumin seed
1 tsp coriander seed
2 cups couscous
4 cups boiling water
1 cup canned chickpeas, (garbanzo beans), drained
Cooking Directions:Pour boiling water over the couscous in a heat-proof bowl. Let stand for 5 minutes until the water is absorbed. Add chickpeas, parsley and scallions. Combine remaining ingredients in another bowl and pour over the couscous and chickpeas. Serve at room temperature or refrigerate until ready to serve. Note: Ideally diabetics should meet with a professional dietitian to plan an individualized diet plan. There is no single diet that meets all the needs of everyone with diabetes. |
