Pear and Fig Cobbler

Ingredients:

2 tbsp unsalted butter, melted
1/2 cup brown sugar, packed firmly
1/2 tsp ground cinnamon
1 cup flour
3 pears, peeled, cored and thickly sliced
1 cup dried figs, stems discarded and quartered
3 cups lowfat vanilla frozen yogurt
2/3 cup sugar
1/2 cup unsalted butter, chilled and cut into small pieces
2 cups boiling water
1/4 tsp salt (optional)

Cooking Directions:

Preheat oven to 375°F. Combine figs with boiling water and soak 15 minutes. Drain thoroughly. Combine pears, half the sugar, 2 Tbsp melted butter, 1 Tbsp flour and half the cinnamon in a bowl. Spread mixture into the bottom of a buttered deep 8 in. square baking dish. Sprinkle figs over pears. Combine remaining sugar, remaining flour, remaining cinnamon, brown sugar, and salt in a food processor or bowl. Cut in chilled butter until mixture resembles coarse meal. Sprinkle over fruit and bake 35-40 or until topping is golden and pears are tender. Serve with frozen yogurt.
