Sirloin with Peppers and Eggplant

Cooking time: 10 min

Ingredients:

2 cloves garlic, crushed
2 tbsp cilantro, or parsley, chopped
2 tbsp grated Parmesan cheese
1/4 cup balsamic vinegar
4 sirloin steaks, about 4 oz each
1 eggplant, about 8 oz each
1/2 lb bottled roasted red bell peppers, finely chopped

Cooking Directions:

Prepare grill or broiler. Broil eggplant 8-10 minutes, turning occasionally or until skin blisters. Transfer eggplant to a paper bag and close. Setaside 15 minutes. Peel eggplant and chop finely. Combine eggplant, roasted peppers, garlic, cilantro and vinegar in a bowl and set aside. Season steaks with salt and pepper to taste. Grill or broil 3-4 minutes per side for medium done meat. Cut steaks crosswise across the grain into thin slices. Serve with eggplant and pepper sauce. Sprinkle with Parmesan.
