Spinach and Leek Purée

Ingredients:

1 tbsp unsalted butter
1/8 tsp salt, to taste
1/8 tsp pepper, to taste
2 leeks, white and pale green part only, rinsed and cut into 1 in. rounds
1-1/2 lb spinach
2 tbsp plain low fat yogurt
1 pinch nutmeg

Cooking Directions:

Place leeks in a steamer basket over boiling water. Cover saucepan and steam 5 minutes. Add spinach to leeks and steam another 5 minutes or until leeks are tender. Thoroughly drain leeks and spinach. Working in batches, purée leeks and spinach in a food processor or blender until finely chopped. Add remaining ingredients and process until blended. Return purée to saucepan over low heat, stirring until mixture is heated throughout. Serve hot.
