Summer Salad with Yogurt Dressing
Ingredients:
1-1/3 tbsp lemon juice
3/4 cup plain low fat yogurt
1/4 cup fresh chives, chopped
1 medium avocado, sliced
8 cherry tomatoes, halved
1 small cucumber, chopped
1 cup curly endive or escarole, chopped
1 medium turnip, finely chopped
1 cup watercress sprigs
Cooking Directions:Combine first 5 ingredients in a large bowl. Add avocado. Combine last 3 ingredients in a bowl. Mix thoroughly and pour over salad. Toss gently to combine. |
