Tuna Steaks with Onion Cream
Ingredients:
1 clove garlic, crushed
1 tbsp peanut oil
1/2 cup onion, chopped
1/3 cup whipping cream
1 cup dry white wine or apple juice
1/3 cup clam juice or fish stock
2 tuna steaks, .75 in. thick, about 6 oz each
Cooking Directions:Heat oil in a heavy nonreactive saucepan over medium heat. Sauté onion and garlic about 5 minutes, until translucent. Add wine and increase heat to high. Cook about 8 minutes, stirring occasionally, until liquid is reduced to 2 Tbsp. Add whipping cream and clam juice. Cook about 4 minutes, until slightly thickened. Season with pepper to taste. Prepare barbecue (medium high heat) or turn on broiler. Season tuna with salt and pepper to taste. Grill about 8 minutes, or broil about 6 minutes, turning once. Transfer to plates, and pour sauce over. |
