Yogurt and Cucumber Soup

Ingredients:

1/2 tsp paprika
1-1/4 cups water
2 cups plain low fat yogurt
1 peeled cucumber, chopped
2/3 cup sour cream
1 oz raisins
6 fresh mint sprigs, chopped
6 salt and pepper

Cooking Directions:

Sprinkle cucumber with salt and set aside. Place yogurt, sour cream, and water in a blender or food processor and blend until smooth. Stir in mint and cucumber and season with salt and pepper to taste. Transfer to a bowl and chill. Top with paprika and raisins before servings.
