Salmon with Couscous Vegetable Salad

Cooking time: 20 min


2-2/3 cups water
1-1/4 cups couscous
1/4 cup cilantro, chopped
3 tbsp olive oil
1 small zucchini, grated
salt and pepper, to taste
2 cups medium fresh carrots, grated
1/2 lb tomatoes, diced
2 tbsp rice vinegar, or white wine vinegar
1 lb salmon

Cooking Directions:

Combine couscous and water in a saucepan. Bring to a boil. Turn off heat and let stand for about 10 minutes, or until the water is absorbed. Add the next 7 ingredients to the couscous, mixing thoroughly. Heat the grill or broiler. Grill or broil the salmon for 4-5 on each side, or until fish flakes easily with a fork. (If using canned salmon, heat until thoroughly cooked.) Serve salmon with couscous vegetable salad.
