Turkey Breasts with Dried Fruit Stuffing

Ingredients:

2 tbsp all purpose flour
2 tbsp unsalted butter
1 tsp cornstarch
2 tbsp aluminum foil
1-1/2 lb day-old whole wheat bread, sliced, ends discarded
1 cup golden raisins
1/2 cup dried currants
1/2 cup pitted prunes, coarsely chopped
2 medium onions, chopped
1-1/2 tsp dried thyme, or 1-1/2 Tbsp fresh, chopped
2 eggs, beaten to blend
2-3/4 cups chicken stock
1 cup dried tart cherries, or dried cranberries
2-1/2 lb skinless turkey breast, halves
2-1/2 lb wooden skewer or toothpick
2 tbsp oven roasting bags
2 tbsp nonstick cooking spray
1 cup cranberry sauce
1 tsp water

Cooking Directions:

Preheat oven to 250°F. Arrange bread slices on oven rack and bake about 15 minutes until very dry. Transfer to a large bowl and coarsely crumble. Add next 4 ingredients and toss. Melt butter in a heavy nonstick skillet over medium high heat. Sauté onions about 10 minutes, or until tender. Add to bread mixture. Stir in thyme and salt and pepper to taste. (Can be made to this point 1 day ahead. Cover and chill.) Mix in eggs. Stir stock into stuffing mixture and set aside. Increase oven temperature to 400°F. Cut a deep horizontal pocket in the thick part of turkey breast without cutting all the way through. Fill cavity with stuffing. Close turkey cavity using skewers or toothpicks. Lightly dust turkey breast with flour, shaking off excess. Place turkey in oven roasting bag. Tie bag securely. Pierce bag according to package directions. Place in a large baking dish and bake about 1 hour until golden and tender. Spoon remaining stuffing into a baking dish which has been coated with cooking spray. Cover with foil which has been coated with cooking spray. Bake stuffing alongside turkey about 30 minutes or until heated through. Uncover stuffing and bake another 20 minutes, or until top is golden. Remove turkey from roasting bag and set aside. Combine 1/4 cup turkey cooking juices with cranberry sauce in a heavy saucepan. Combine cornstarch and water in a small mixing bowl and mix thoroughly. Stir into cranberry mixture. Heat over medium high heat, stirring constantly until mixture comes to a boil and begins to thicken. Slice stuffed turkey breast crosswise and serve with stuffing and cranberry sauce.
