Lemon-Anise Poached Pears
Ingredients:
1-1/2 quarts water
2 tbsp anise seed, or 2 whole
8 pears, peeled and cored
1 cup sugar
2 lemons
Cooking Directions:Squeeze juice from 1 lemon into Dutch oven or flameproof casserole. Thinly slice remaining lemon and place in Dutch oven. Add pears, sugar, star anise and water to pan and boil over high heat. Reduce heat to low, cover pan and simmer 30 minutes or until pears are tender. Transfer pears to a bowl. Bring lemon juice mixture to a boil over high heat. Cook another 15 minutes, uncovered, or until reduced by half. Pour hot syrup over pears. Cover and refrigerate until pears are well chilled, turning occasionally. Serve pears with syrup. |
