Pasta with Sweet Potato Sauce
Ingredients:
1/4 cup grated Parmesan cheese
1 lb sweet potatoes, peeled and sliced
1/8 tsp salt
1/4 tsp white pepper, ground
1/2 lb cooked pasta
1-1/2 cups evaporated milk
2 tbsp parsley, chopped
Cooking Directions:Steam sliced sweet potatoes for about 15 minutes, or until soft. Place into blender with evaporated milk and whisk for about 7 minutes. The mixture will become a glossy, rich color. Season with salt and white pepper and pour over cooked pasta. Top with grated Parmesan cheese and parsley. Source: 5 A DayNutritionist Recommended For: |
