Apple Baked Pancake

Ingredients:

1/2 cup lowfat milk, or reconstituted nonfat dry milk
1/3 cup dry egg mix
1 red cooking apple, cored and sliced
1 tbsp butter
3/4 cup water
1 tbsp sugar
3 tbsp sugar
1/4 cup flour
3/4 tsp ground cinnamon
1/4 tsp salt

Cooking Directions:

Preheat oven to 375°F. Melt the butter in an 8 in. baking pan, over medium heat, melt the butter. Stir in sugar and cinnamon. Sauté the apple slices in the sugar mixture, turning occasionally, until crispy-tender, about 3-4 minutes. Arrange slices neatly on bottom of pan. Mix together the flour, sugar, egg mix, and salt. Combine the water and milk and beat into the flour mixture until smooth. Pour over the hot apple slices and bake at 375°F for about 15 minutes, or until golden brown and the sides become puffy. Serve immediately (the puff will fall, so serve the pancake the moment it comes out of the oven). Source: USDA / American Egg Board
