Avocado and Grapefruit Salad

Ingredients:

2 cups grapefruit segments
1 avocado, halved lengthwise, pitted, peeled and cut into .25 in. slices
6 oz garden salad
1 tsp cumin seed
8 small black olives, sliced
2 tbsp tomato juice
1/4 tsp pepper
1/8 tsp salt (optional)
2 tbsp olive oil
1/4 cup cilantro, or parsley, chopped
3 tbsp lemon juice
1 clove garlic, crushed
1 red onion, thinly sliced

Cooking Directions:

Combine first 5 ingredients and 2 Tbsp lemon juice in a mixing bowl. Arrange lettuce on individual salad plates. Top with avocado grapefruit salad and sprinkle with olives. Combine remaining ingredients, except cilantro, in a jar with a tight-fitting lid. Shake vigorously. Add cilantro and shake again. Pour dressing over salad and toss.
