Creamy Broccoli Soup
Ingredients:
1/4 cup celery, diced
1 cup milk
1 cup half and half
1/4 cup onion, chopped
2 tbsp cornstarch
1/8 tsp thyme, ground
1/4 cup Swiss cheese, grated
1 cup low sodium chicken broth
1-1/2 cups broccoli, chopped
Cooking Directions:Place first 4 ingredients in a heavy pan over medium high heat. Bring to a boil. Cover pan, reduce heat to low and cook 8 minutes, or until vegetables are tender. Combine milk, half and half, cornstarch, thyme and salt and pepper to taste in a bowl. Mix well and pour into pan with vegetables. Cook over medium heat, stirring constantly, until soup begins to thicken and boil. Remove from heat. Serve sprinkled with cheese. |
