Glazed Braised Carrots

Cooking time: 15 min

Ingredients:

1/2 cup water
1/8 tsp nutmeg
1 shallot, minced
1 tbsp parsley, chopped
1 tbsp unsalted butter
1-1/2 tbsp honey
1 lb carrots, peeled and cut into .25 in. slices

Cooking Directions:

Melt butter in a medium nonstick saucepan over medium heat. Sauté shallot 1 minute. Stir in carrots and water. Cover and simmer 8-10 minutes or until carrots are tender. Stir in honey and nutmeg. Simmer 2-3 minutes or until liquid begins to thicken. Stir in parsley.
