Seafood Club Sandwiches

Ingredients:

1 tomato, sliced
2 tbsp mayonnaise
4 lettuce leaves
1 cup alfalfa sprouts
8 slices bacon
8 slices whole wheat bread, or rye bread, toasted
1/2 lb lobster meat, or imitation lobster meat

Cooking Directions:

Heat a heavy nonstick skillet over medium-high heat. Cook bacon 4-5 minutes or until just crisp. Drain on paper towels. Spread toasted bread slices with mayonnaise. Layer vegetables, bacon, and seafood on half the bread slices. Top with remaining bread slices.
