Simple Black Beans and Rice

Preparation time: 5 min Servings: 4
Cooking time: 25 min

Ingredients:

1/8 tsp salt (optional)
1 cup water
1 tbsp unsalted butteror margarine
1 can (15 oz) black beans, rinsed and drained
1 cup white rice
1 cup chicken stock or vegetable stock

Cooking Directions:

Combine stock, water and salt in a saucepan and bring to a boil over high heat. Stir in rice and return to a boil. Immediately reduce heat to low. Cover saucepan and simmer 15 minutes. Stir in beans. Cover and simmer another 5- 8 minutes, or until rice is tender and liquid is absorbed. Remove from heat and let stand 5 minutes. Add butter and fluff with a fork before serving.
